If you want just one knife, think Santoku or Gyuto, with a pointed White Paper Shirogami Steel blade. The Santoku in this range has a 17cm blade and weighs 125g. It’s wrapped in a softer steel and bevelled on both sides, so suitable for the left and right handed.
