We are a small and dedicated team with a BIG heart who put great passion and energy into what we do.

We thrive on building strong relationships with all of our students and take great pride in guiding our aspiring chefs to reach their Enterprise in a galaxy far far away!

We offer confidence, inspiration and skill to all that we work with and genuinely enrich peoples’ lives.

We like many love local, strive to remain sustainable and have achieved international recognition for our Professional Culinary Training programmes.

Not bad from a little refurbished Bakery building on a farm on the South Coast tucked away from the chaos of Poole & Bournemouth.

Consider the heart warming story of the underdog, and how the little guy can reign victorious over the BIG DOGS!

This is certainly where we are coming from in this situation.

Up against the biggest of the big we are excited to compete with the likes of Le Cordon Bleu- An institution known for excellence, with a rich heritage rolling all the way back to 1895 they have truly seen it all, literally living through the war.

River Cottage– We’ve all seen vast TV coverage of this quaint, sustainable farm situated set up. Hugh Fernley Whittingstall is obviously well received across Britain, as he showcases his Farm to Fork methods, well known for teaching the importance of remaining sustainable and how to go about becoming self sustaining with their offering of lifestyle and cookery courses. River Cottage actually took home The Food & Travel Awards last year in 2017!

The Kitchen @ Chewton Glen are newly established, offering all inclusive courses in a purpose built space in a beautiful resort setting. Well known James Martin is a multi award winner who has been famously celebrating British food to the nation since his TV debut in 1996,  he and his experienced team of course also hold in high regard the picked to plate philosophy.

Eckington Manor– These guys run all ability groups set in Worcestershire in a converted barn, set up by Judy Gardner (of Garner’s Foods).

Featured on BBC 1’s Apprentice, these guys are all about sourcing ingredients from the farm where possible.

Exeter Cookery School has a Quayside location, they are family run by Jim & Lucy Fisher who started their teaching experience in France running cookery courses for locals and tourists. Jim is a former Masterchef Semifinalist, they are extremely well stocked when it comes to equipment and sponsors and they have just celebrated a win of Best Cookery School as voted by Food Magazine.

Yorkshire Wolds– Are yet again in a farm setting near a picturesque town up North. They offer all inclusive courses with small class sizes and won The Food Awards last year. They have also established a great connection with young adults undergoing their Duke of Edinburgh Awards.

Lets go back to WhitePepper now!

It is testament to all of our hard work and dedication that we are in the TOP 7 and are able to compete against these Cookery Schools, we are so excited to embark on this challenge.

Out of this years line up Le Cordon Bleu are the only other Academy offering Professional Culinary Training, so this is particularly exciting for us as we can showcase what we are bringing to the industry.

As well as offering Professional Culinary Training to aspiring chefs, food entrepreneurs and career changers, we also provide a selection of all inclusive recreational courses for all abilities in a bespoke rustic farm setting.

We have ourselves celebrated one win this year already. We took home The Education Award at The BAPTAs, where again we were up against the heavy hitters in the industry, and we totally smashed it! In this category we went head to head with Bournemouth University International College, CHI Training, Lulworth Education Service, South West Regional Assessment Centre and Hengistbury Head Outdoor Education Centre. Our efforts paid off as our contribution to the industry was clear, along with our passion for training young and aspiring chefs.

We won Britain’s Favourite Small Cookery School 2014, Best One Day Cookery Course for our Feathered & Furred course in 2014.

Luke Stuart, Founder, Director and Chef Tutor has been in the business for over 20 years experiencing first hand life as a young chef out on the sea and how these conditions can be far from ideal for catering purposes- this knowledge and experience is so important to those of our aspiring professionals who are here particularly to develop their repertoire for their work on the seas.

Luke has been teaching since 2004 with experience in the Mediterranean, Caribbean & London, as Senior Chef Tutor at Tante Marie Culinary Academy, which is part owned by Gordon Ramsay. Previously celebrating finalist positions with the UK and Ireland Cookery School Awards in 2014 with Best Cookery School Tutor and Best Chef Tutor. You can find Luke teaching on our Professional courses as well as our 5 day Masterclasses.

WhitePepper are the only Chef Academy in the UK to have a former Michelin Star Chef as a tutor. Mark Treasure has been part of the team since January 2017 where he put aside his extremely successful career to begin sharing his experience with others as a teacher. Mark has quite a portfolio behind him including the achievement of a Michelin Star from his days as head chef at The Feathers at Woodstock. Some of his other previous experience comes from Cafe Royale, The Capitol, The Green House, he was head chef at The museum Inn at Farnham, Executive head chef at The Park in Bath and The Hotel Grovenor in Shaftesbury- also as head chef, this is just to name but a few! Mark now delivers both the recreational and professional courses, sharing his experience and knowledge in a much more relaxed setting and with the ability to prepare our professional students realistically for life in the industry.

So…we’ve proved that smaller, local businesses can come out on top more than once, now we would love to do it again!

Allow me to present the story of David & Goliath, which is a lesson of overcoming what seems impossible…

Goliath refers to the high rollers in this category and WhitePepper can take the role of David.

I’m not suggesting that we will resort to throwing rocks at anyones head to win or anything… I’m simply demonstrating that the underdog can emerge victorious.
