You may have spotted White Pepper Cookery School this autumn doing a couple of demonstrations. The first was at the launch of Dorset Food Week using a cookery theatre supplied by Chefs On Stage. I did a double act with excellent butcher Lee Moreton from The Purbeck Larder. Lee was skinning and jointing a whole deer and I cooked the fillet with wild mushrooms, chestnuts, winter greens and a licorice jus. The line up on the day was great. We were on after Matt Follas, Masterchef winner 2009 and before Dorset’s only Michelin starred chef Russell Brown from Sienna’s. We had a good crowd and had great fun dodging the rain!
Our second demonstration of the day featuring game birds drew in the kids. They looked on, took part in the plucking and were so pleased with a tail feather to take home. I gave a young lad one of our pastry brushes for his animated enthusiasm in food and cooking – brilliant.
Later in the autumn we were at Kingston Maurward Agricultural College performing recipes from our Festive Four course: juniper cured Dorset pancetta with stir fried Brussels sprouts and Riesling, steamed white chocolate and pistachio pudding with orange scented custard and cranberry compote, to name but a few.
