Our modern patisserie course has been developed to offer learners the highest value training in a concise period of time (5 days) and currently appeals to business start-ups and chefs/pastry chefs, as well as experienced home bakers with a passion for patisserie and advanced bakery.

This course is delivered by the acclaimed Mark Bennett, who is one of the UK’s leading bakers, having won 22 world bread awards and over 100 gold medals for cake decoration. The programme provides the greatest of opportunity to develop fine skills and invaluable knowledge through professional demonstrations, 1-2-1 tuition and the provision of commercial recipes.

Mark is a 5th generation baker and currently runs a chain of 3 hugely popular patisserie shops along the South Coast of England. His business experience is always appreciated by those wishing to open their own shops.

This course tackles all aspects of patisserie including; advanced Viennoisere, gateaux, caramel work, professional decorations and jellies (please see below for specific details).
